  • 4 6-ounce salmon fillets, skin-on
  • 1 bunch asparagus, trimmed
  • 2 Tbsp. olive oil
  • 1 whole lemon, sliced
  • 2 cloves garlic, minced
  • 1 tsp. dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, for garnish (optional)

  • Aluminum foil
  • Baking sheet

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Tear off four large pieces of aluminum foil, each about 12 inches long.
  3. Place asparagus in the center of each piece of foil, drizzle with olive oil, and sprinkle with salt and pepper.
  4. Lay a salmon fillet on top of the asparagus, squeeze lemon juice over the fillets, and scatter garlic and oregano on top.
  5. Fold the foil to create a sealed packet, ensuring it’s tightly wrapped.
  6. Place the foil packets on a baking sheet and bake for about 15-20 minutes.
  7. Remove from the oven, garnish with fresh parsley if desired, and serve directly from the foil.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
