Comforting Gnocchi and Tomato Bake

A comforting, cheesy dish made by combining cooked gnocchi with savory tomato sauce, topped with melted cheese, and baked until bubbly.

  • 1 lb. gnocchi store-bought or homemade
  • 2 Tbsp. olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 oz. crushed tomatoes 1 can
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, grated
  • ½ cup Parmesan cheese, grated
  • Fresh basil for garnish optional

  • 9x13 baking dish
  • Oven

Method
 

  1. Preheat the oven to 400°F.
  2. In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float. Drain and set aside.
  3. In a large skillet over medium heat, drizzle the olive oil. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Add the crushed tomatoes, oregano, basil, salt, and pepper. Let it simmer for about 10 minutes.
  5. Gently fold the cooked gnocchi into the skillet, then spread the mixture into a greased 9x13 baking dish.
  6. Sprinkle mozzarella and Parmesan cheese generously over the top.
  7. Bake in the preheated oven for 25 to 30 minutes, or until the cheese is bubbly and golden brown.
  8. Top with fresh basil if desired and serve.

This dish is perfect for chilly evenings and can be easily customized with seasonal vegetables.
