Comforting One-Pan Sausage, Potatoes, and Veggies

  • 1 lb. Italian sausage Mix of sweet and spicy recommended
  • 1 lb. Baby potatoes Yukon Golds preferred
  • 2 cups Broccoli florets Can substitute with seasonal vegetables
  • 1 Red onion Sliced into wedges
  • 3 Tbsp. Olive oil
  • 2 tsp. Garlic powder
  • 1 tsp. Paprika
  • Salt to taste
  • Pepper to taste
  • Fresh rosemary or thyme Optional for garnish

Equipment

  • Large mixing bowl
  • Rimmed baking sheet
  • Oven

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper in a large bowl.
  3. Spread the seasoned potatoes on a baking sheet, add the cut sausage, broccoli, and red onion.
  4. Roast in the oven for about 25 minutes, tossing halfway through.
  5. Check for doneness, and if needed, roast for an additional 5-10 minutes until fork-tender and browned.
  6. Remove from oven, garnish with fresh herbs, and serve.

Notes

This dish can be prepared ahead of time; just store the ingredients in the fridge until ready to roast.
