- In a large skillet over medium heat, brown the ground beef, breaking it apart with a wooden spoon until it turns a rich, deep brown.
- Add the chopped onion and cook until it’s translucent and fragrant.
- In your slow cooker, layer the ground beef mixture, black beans, corn, diced tomatoes, and ranch seasoning.
- Gently spread the frozen tater tots on top of the beef mixture.
- Cover the slow cooker and set it on low for 6-7 hours or high for 4 hours.
- About 15 minutes before serving, sprinkle the shredded cheddar cheese on top.
- Dig in, and enjoy that warm, comforting flavor!
Notes
This casserole can be frozen before cooking. Thaw overnight in the fridge and then cook as directed.
