Comforting Slow Cooker Cowboy Casserole

This Slow Cooker Cowboy Casserole is a hearty blend of ground beef, beans, corn, and crispy tater tots, all slow-cooked to perfection for a comforting holiday meal.

  • 1 lb. ground beef I prefer using grass-fed beef.
  • 1 medium onion, chopped A sweet yellow onion works beautifully here.
  • 1 15 oz can of black beans, drained Adds protein and a lovely creamy texture.
  • 1 15 oz can of corn, drained Sweet and crisp, ideal for that pop of flavor.
  • 1 cup diced tomatoes Use fire-roasted diced tomatoes for a smoky depth.
  • 1.5 cups frozen tater tots For that crispy topping!
  • 1 packet ranch seasoning mix Adds a zesty ranch flavor that lifts the dish.
  • 1 cup shredded cheddar cheese The gooier, the better; I love sharp cheddar.

  • Slow cooker
  • 1 Large skillet
  • Wooden spoon

Method
 

  1. In a large skillet over medium heat, brown the ground beef, breaking it apart with a wooden spoon until it turns a rich, deep brown.
  2. Add the chopped onion and cook until it’s translucent and fragrant.
  3. In your slow cooker, layer the ground beef mixture, black beans, corn, diced tomatoes, and ranch seasoning.
  4. Gently spread the frozen tater tots on top of the beef mixture.
  5. Cover the slow cooker and set it on low for 6-7 hours or high for 4 hours.
  6. About 15 minutes before serving, sprinkle the shredded cheddar cheese on top.
  7. Dig in, and enjoy that warm, comforting flavor!

Notes

This casserole can be frozen before cooking. Thaw overnight in the fridge and then cook as directed.
