  • 1 lb. boneless, skinless chicken breasts
  • 2 cups cauliflower rice fresh or frozen
  • 1 cup broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • ½ cup cream cheese, softened
  • 1 cup chicken broth
  • 1 tsp. garlic powder
  • ½ tsp. onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add a drizzle of olive oil. Season chicken breasts and sear for 5-7 minutes per side until cooked through. Chop into bite-sized pieces.
  3. In the same skillet, add cauliflower rice and broccoli. Cook for 4-5 minutes until tender. Stir in cream cheese and chicken broth until combined. Fold in cooked chicken and half of the cheddar cheese.
  4. Transfer mixture to a greased baking dish. Sprinkle remaining cheddar on top and bake for 25-30 minutes.
  5. Let rest for 5-10 minutes before serving. Garnish with fresh parsley.

Notes

This casserole deepens in flavor overnight, making leftovers just as delicious!
