Method
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add a drizzle of olive oil. Season chicken breasts and sear for 5-7 minutes per side until cooked through. Chop into bite-sized pieces.
- In the same skillet, add cauliflower rice and broccoli. Cook for 4-5 minutes until tender. Stir in cream cheese and chicken broth until combined. Fold in cooked chicken and half of the cheddar cheese.
- Transfer mixture to a greased baking dish. Sprinkle remaining cheddar on top and bake for 25-30 minutes.
- Let rest for 5-10 minutes before serving. Garnish with fresh parsley.
