- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 4 minutes. Stir in minced garlic and cook for an additional 30 seconds.
- Push the onions to one side and add salmon fillet to the pan. Cook for about 4 minutes on each side until golden brown and flakes easily.
- Remove salmon from the pan and set aside. Pour heavy cream into the skillet, scraping up any bits from the bottom. Stir in Parmesan cheese until thick and creamy.
- Flake the cooked salmon and return it to the pan along with the spinach. Stir until spinach wilts. Season with salt and pepper.
- Toss in cooked pasta and mix until everything is coated in the creamy sauce. Serve immediately, garnished with fresh dill or parsley.
