Cozy Creamy Salmon and Spinach Pasta

  • 8 ounces pasta, favorite type (fettuccine recommended)
  • 2 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 4 minutes. Stir in minced garlic and cook for an additional 30 seconds.
  3. Push the onions to one side and add salmon fillet to the pan. Cook for about 4 minutes on each side until golden brown and flakes easily.
  4. Remove salmon from the pan and set aside. Pour heavy cream into the skillet, scraping up any bits from the bottom. Stir in Parmesan cheese until thick and creamy.
  5. Flake the cooked salmon and return it to the pan along with the spinach. Stir until spinach wilts. Season with salt and pepper.
  6. Toss in cooked pasta and mix until everything is coated in the creamy sauce. Serve immediately, garnished with fresh dill or parsley.

Notes

This dish is perfect for holiday gatherings and can be made ahead; just prepare the sauce in advance and reheat before serving.
