  • 8 oz. uncooked penne pasta
  • 1 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 can (14 oz.) diced tomatoes, undrained
  • 2 cups vegetable broth

  • 1 cup heavy cream
  • 1 tsp. Italian seasoning
  • Salt and pepper to taste

  • 1 cup grated Parmesan cheese

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the diced tomatoes, vegetable broth, and uncooked pasta. Ensure the pasta is submerged.
  4. Bring to a gentle boil, reduce to a simmer, cover, and cook for about 12 minutes.
  5. Check the pasta for doneness. If al dente, remove from heat.
  6. Stir in the heavy cream and Italian seasoning. Season with salt and pepper to taste.
  7. Fold in the grated Parmesan cheese until melted into the sauce.
  8. Serve hot, garnished with fresh basil.
