- In a large pot of salted boiling water, cook the linguine until al dente according to the package instructions. Drain it, reserving ½ cup of the pasta water for later.
- In a large skillet over medium heat, add the olive oil and let it warm up. Then, toss in the Cajun sausage slices. Sauté for about 5-7 minutes until they’re browned and crisp.
- Introduce the diced bell pepper and onion to the skillet, cooking until softened. Then, add the minced garlic and sauté for an additional minute.
- Pour in the heavy cream and sprinkle the Cajun seasoning over the mixture. Stir well and let it simmer on low heat for about 3-5 minutes.
- Add in the cooked linguine, along with a bit of the reserved pasta water. Toss everything gently to combine. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley or green onions.
