Creamy Cajun Sausage Linguine

  • 8 oz. linguine pasta Fresh or dried pasta works.
  • 1 Tbsp. olive oil Extra virgin recommended.
  • 1 lb. Cajun sausage Andouille preferred for its flavor.
  • 1 medium red bell pepper, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp. Cajun seasoning
  • Salt and pepper To taste.
  • for garnish Fresh parsley or green onions, chopped

Method
 

  1. In a large pot of salted boiling water, cook the linguine until al dente according to the package instructions. Drain it, reserving ½ cup of the pasta water for later.
  2. In a large skillet over medium heat, add the olive oil and let it warm up. Then, toss in the Cajun sausage slices. Sauté for about 5-7 minutes until they’re browned and crisp.
  3. Introduce the diced bell pepper and onion to the skillet, cooking until softened. Then, add the minced garlic and sauté for an additional minute.
  4. Pour in the heavy cream and sprinkle the Cajun seasoning over the mixture. Stir well and let it simmer on low heat for about 3-5 minutes.
  5. Add in the cooked linguine, along with a bit of the reserved pasta water. Toss everything gently to combine. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley or green onions.
