Delicious Spicy Ginger Chicken

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 Tbsp. vegetable oil
  • 4 cloves garlic, minced
  • 1 Tbsp. fresh ginger, grated
  • 2 Tbsp. soy sauce
  • 1 Tbsp. honey
  • 1 Tbsp. rice vinegar
  • 1 tsp. red pepper flakes
  • ½ tsp. ground black pepper

Equipment

  • Large mixing bowl
  • 12-inch cast iron skillet

Method
 

  1. In a large mixing bowl, combine the soy sauce, honey, rice vinegar, minced garlic, grated ginger, red pepper flakes, and ground black pepper. Whisk until well combined, then add chicken thighs, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  2. In a large skillet, heat vegetable oil over medium-high heat until shimmering.
  3. Remove chicken from marinade (keeping marinade for later) and add to hot skillet. Sear chicken for 5-7 minutes per side until golden brown and reaches an internal temperature of 165°F.
  4. Pour reserved marinade over chicken. Bring to a boil, then reduce heat and simmer for 5-7 minutes until sauce thickens slightly.
  5. Plate the chicken, garnish with sliced green onions and a sprinkle of sesame seeds before serving.

Notes

For optimal flavor, marinate the chicken thighs for a couple of hours or up to 24 hours in advance.
