Delicious Taco Rice Bowl with Doritos

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 15 oz can black beans, drained and rinsed
  • 1 lb. ground beef (or turkey for a lighter option)
  • 1 packet taco seasoning
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup chopped lettuce
  • 1 medium avocado, diced
  • 1 cup salsa
  • 2 cups Doritos, crushed

Method
 

  1. In a medium saucepan, combine the rice and chicken broth. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 18-20 minutes or until the rice is fluffy and the liquid has been absorbed.
  2. In a large skillet over medium heat, brown the ground beef. Use a wooden spoon to break it apart until it’s evenly browned, about 5-7 minutes.
  3. Add the taco seasoning to the cooked beef, along with the black beans and corn. Stir well to combine, letting everything simmer together for an additional 5 minutes.
  4. In a large serving bowl, layer the rice as the base. Top it with the seasoned beef mixture, followed by crunchy lettuce, diced avocado, and shredded cheddar cheese. Finish with a scoop of salsa and layer the crushed Doritos on top.
  5. Share this delightful bowl with friends and family. Enjoy the mix of textures and flavors that come together in every bite!
