Ingredients

  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 Tbsp. dried culinary lavender

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • Powdered sugar for dusting (optional)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, salt, and lavender.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, lemon zest, and lemon juice.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Drop the dough onto a lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack. Dust with powdered sugar if desired.

Notes

Allow cookies to cool completely before storing to retain their texture and flavor.
