- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain the pasta.
- In the same pot, stir in the hummus along with the reserved pasta water, starting with ¼ cup.
- In a separate skillet, heat the olive oil over medium heat. Sauté the spinach for 2-3 minutes until wilted, then add cherry tomatoes and garlic powder, cooking until tomatoes soften.
- Add the cooked pasta to the skillet, mixing well with the vegetables. Adjust the texture with more pasta water if needed, and season with salt and pepper to taste.
- Plate the creamy hummus pasta and top with fresh basil and a squeeze of lemon juice before serving.
