  • 8 ounces pasta, whole wheat penne

  • 1 cup hummus, roasted garlic flavor

  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

Method
 

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain the pasta.
  2. In the same pot, stir in the hummus along with the reserved pasta water, starting with ¼ cup.
  3. In a separate skillet, heat the olive oil over medium heat. Sauté the spinach for 2-3 minutes until wilted, then add cherry tomatoes and garlic powder, cooking until tomatoes soften.
  4. Add the cooked pasta to the skillet, mixing well with the vegetables. Adjust the texture with more pasta water if needed, and season with salt and pepper to taste.
  5. Plate the creamy hummus pasta and top with fresh basil and a squeeze of lemon juice before serving.
