Ingredients

  • 8 large eggs
  • 1 cup whole milk

  • 1 cup finely chopped vegetables (bell peppers, spinach, red onions)

  • 1 cup shredded cheese (sharp cheddar and mozzarella blend)
Group: Seasoning and Garnish
  • Salt and pepper to taste
  • Fresh herbs (parsley or basil) for garnish

  • Cooking spray or olive oil for greasing the muffin tin

  • Large mixing bowl
  • Whisk

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Grease the muffin tin generously with cooking spray or olive oil.
  3. In a large mixing bowl, whisk together the eggs and whole milk until frothy.
  4. Gently fold in the finely chopped vegetables and shredded cheese.
  5. Season the mixture with salt and pepper to taste.
  6. Pour the mixture into each muffin cup, filling them about three-quarters full.
  7. Bake in the preheated oven for 20-25 minutes or until the tops are golden and a toothpick comes out clean.
  8. Allow to cool for a few minutes before removing them from the tin and garnishing with fresh herbs.

Notes

Frittata cups can be made ahead of time and stored in the fridge for up to three days. Reheat in the oven or microwave before serving.
