Garlic Butter Chicken Thighs

  • 4 pieces bone-in, skin-on chicken thighs
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 Tbsp. fresh rosemary, chopped (or 1 tsp. dried)
  • 1 Tbsp. fresh thyme leaves (or 1 tsp. dried)
  • Salt and black pepper, to taste
  • 1 piece lemon, zest
  • fresh parsley, chopped, for garnish

  • Meat thermometer
  • Paper towels For drying chicken

Method
 

  1. Start by patting your chicken thighs dry with paper towels and season both sides generously with salt and black pepper.
  2. In a large skillet, melt the unsalted butter over medium heat.
  3. Add the seasoned chicken thighs, skin-side down, and sear for about 5-7 minutes until golden-brown. Flip and add garlic, rosemary, and thyme.
  4. Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  5. Garnish with lemon zest and parsley before serving.

Notes

Ensure proper drying of the chicken thighs for crispy skin. Avoid overcrowding the pan while searing.
