Gingerbread Snowball Cookies

  • 1 cup unsalted butter, softened to room temperature
  • 1 cup powdered sugar, plus extra for rolling
  • 2 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 cup ground pecans or your choice of nuts
  • 2 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • pinch of salt

Method
 

  1. Cream together the softened unsalted butter and powdered sugar in a large mixing bowl using an electric mixer on medium speed until light and fluffy, about 2 to 3 minutes.
  2. Add in the vanilla extract and mix until combined.
  3. In a separate bowl, whisk together the all-purpose flour, ground pecans, ground ginger, ground cinnamon, ground nutmeg, and a pinch of salt.
  4. Gradually add the dry mixture into the butter-sugar blend, folding in until just combined.
  5. Wrap the dough in plastic wrap and refrigerate it for at least an hour.
  6. Preheat the oven to 350°F (175°C). Scoop tablespoon-sized portions of dough and roll them into balls.
  7. Place the dough balls on a parchment-lined baking sheet and bake for 12-15 minutes until slightly golden at the bottom.
  8. Let the cookies cool for a few minutes before rolling them in powdered sugar.
