  • 4 medium sweet potatoes organic varieties preferred
  • 1 lb. ground turkey use a lean variety
  • 1 Tbsp. olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning preferably without additives
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheddar cheese sharp cheddar complements the sweetness
  • Salt and pepper to taste
  • Sour cream or Greek yogurt for serving
  • Chopped fresh cilantro for garnish
  • Avocado slices optional but recommended

  • Fork for fluffing sweet potatoes

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Poke holes in each sweet potato with a fork and place them on a baking sheet. Bake for 45-60 minutes or until tender.
  3. In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, then add the garlic and cook for an additional 30 seconds.
  4. Add the ground turkey and taco seasoning. Cook until the turkey is browned and cooked through, breaking up any large pieces.
  5. Mix in the black beans and corn, and heat through. Taste for seasoning and add salt and pepper if needed.
  6. When sweet potatoes are cooked, cool slightly, slice open, and fluff the insides. Spoon the turkey mixture into each potato half.
  7. Sprinkle cheddar cheese over the stuffed potatoes and return to the oven for an additional 5-10 minutes until cheese is melted.
  8. Serve hot, topped with sour cream or Greek yogurt, cilantro, and avocado slices.

Notes

These stuffed sweet potatoes store well, making them perfect for meal prep! They can also be frozen for better texture when reheating.
