- Preheat your oven to 400°F (200°C).
- Poke holes in each sweet potato with a fork and place them on a baking sheet. Bake for 45-60 minutes or until tender.
- In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, then add the garlic and cook for an additional 30 seconds.
- Add the ground turkey and taco seasoning. Cook until the turkey is browned and cooked through, breaking up any large pieces.
- Mix in the black beans and corn, and heat through. Taste for seasoning and add salt and pepper if needed.
- When sweet potatoes are cooked, cool slightly, slice open, and fluff the insides. Spoon the turkey mixture into each potato half.
- Sprinkle cheddar cheese over the stuffed potatoes and return to the oven for an additional 5-10 minutes until cheese is melted.
- Serve hot, topped with sour cream or Greek yogurt, cilantro, and avocado slices.
