  • 6 oz. bittersweet chocolate Ghirardelli preferred for smooth meltability.
  • ½ cup unsalted butter Make sure it’s at room temperature.
  • 1 cup powdered sugar
  • 2 large eggs Room temperature for better emulsification.
  • 2 large egg yolks Adds richness to the gooey center.
  • ½ tsp. vanilla extract
  • ¼ cup all-purpose flour
  • pinch salt

Equipment

  • 4 6-ounce ramekins For baking the lava cakes.
  • Double boiler or heatproof bowl For melting chocolate and butter.
  • Whisk For mixing ingredients.
  • Baking sheet To place ramekins on while baking.

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a double boiler, melt the chocolate and butter together.
  3. Whisk in the powdered sugar until smooth.
  4. Add the eggs and yolks to the mixture, whisking until combined.
  5. Fold in the flour and salt gently until combined.
  6. Grease the ramekins and dust with flour or cocoa powder.
  7. Pour the batter into the ramekins and place them on a baking sheet.
  8. Bake for 12-14 minutes, until edges are firm and centers are soft.
  9. Let rest for 1 minute before inverting onto plates and serving.

Notes

For the best experience, serve immediately after baking.
