Ingredients
  

Group: For the Shrimp
  • 1 lb. large shrimp, peeled and deveined
  • 2 Tbsp. extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 Juice and zest of lemon
  • 1 tsp. red pepper flakes adjust for spice level
  • Salt and freshly ground black pepper to taste
Group: For the Asparagus
  • 1 lb. asparagus, trimmed and cut into 2-inch pieces
  • 2 Tbsp. unsalted butter
  • Fresh parsley, chopped for garnish
  • Lemon wedges for serving

Method
 

  1. In a mixing bowl, combine the shrimp with olive oil, garlic, lemon juice, lemon zest, red pepper flakes, salt, and pepper. Let marinate.
  2. Melt the butter in a large skillet over medium-high heat. Add asparagus and sauté for 3-4 minutes until vibrant green and tender-crisp.
  3. Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes until they start to turn pink, then flip and cook for another minute until fully cooked.
  4. Return the asparagus to the skillet, mix with the shrimp, and heat through for an additional minute. Serve hot, garnished with parsley and lemon wedges.

Notes

Allow the shrimp to marinate for at least 15 minutes to enhance the flavor.
