  • 2 cups cooked chicken breast, chopped
  • 1 ripe avocado
  • 4 large whole wheat or spinach tortillas
  • 1 cup spinach or arugula
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • 1 Tbsp. lime juice
  • Salt and pepper, to taste
  • ¼ cup shredded cheese (optional) like Mexican blend or feta

Method
 

  1. Start by chopping your cooked chicken into bite-sized pieces. Using leftover roasted chicken adds greater flavor.
  2. In a medium bowl, mash the avocado with a fork until creamy. Stir in lime juice, and season with salt and pepper.
  3. Grab a tortilla, spread the avocado mixture in the center, and layer on chicken, spinach, tomatoes, onion, and a sprinkle of cheese.
  4. Fold the sides in and roll tightly from the bottom up. Make sure it’s snug to avoid unrolling.
  5. Slice the wrap in half diagonally for presentation, showcasing the colorful ingredients.
