- In a medium mixing bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until well combined.
- Place the chicken thighs in your slow cooker in a single layer.
- Pour the prepared sauce over the chicken, ensuring it coats each piece.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
- Once cooked, remove the chicken and stir cornstarch mixed with cold water into the sauce to thicken. Cook on high for 10 minutes.
- Shred the chicken and return it to the sauce. Serve over rice or vegetables, garnished with sesame seeds and green onions.
Notes
For best results, marinate chicken in sauce for a few hours beforehand.
