Ingredients
  

Group: Salad Ingredients
  • 3 cups shredded cooked chicken Rotisserie chicken works well.
  • 4 cups chopped Napa cabbage
  • 1 cup shredded carrots
  • 1 cup chopped red bell pepper
  • 1 cup sugar snap peas, trimmed and halved
  • ½ cup sliced green onions
  • ½ cup chopped cilantro Optional, but recommended.
  • 1 cup crispy chow mein noodles For crunch.
Group: Dressing Ingredients
  • ½ cup sesame oil
  • 2 Tbsp. soy sauce Low-sodium preferred.
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. honey Or maple syrup for vegan.
  • 1 Tbsp. Dijon mustard
  • 1 clove garlic, minced
  • 1 pinch red pepper flakes Adjust to taste.

Method
 

  1. In a medium bowl, combine the sesame oil, soy sauce, rice vinegar, honey, Dijon mustard, garlic, and red pepper flakes. Whisk until smooth.
  2. In a large mixing bowl, combine the shredded chicken, Napa cabbage, carrots, red bell pepper, sugar snap peas, green onions, and cilantro. Toss gently.
  3. Pour the dressing over the salad mixture and toss gently until evenly coated.
  4. Just before serving, sprinkle crispy chow mein noodles on top.

Notes

Allow the salad to rest for 10-15 minutes before serving for optimal flavor.
