  • 1 cup long-grain basmati rice
  • 2 cups chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 2 Tbsp. olive oil (extra virgin for the best taste)
  • ¼ cup fresh parsley, chopped (or dill for a different twist)
  • Salt and pepper to taste

Method
 

  1. In a medium-sized pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent.
  2. Add the long-grain basmati rice to the pot, stirring gently. Toast the rice for about 2 minutes until slightly golden.
  3. Pour in the chicken or vegetable broth and squeeze in the fresh lemon juice. Add lemon zest and bring to a boil.
  4. Reduce heat to low, cover, and let it simmer for about 18-20 minutes. Fluff with a fork and fold in chopped parsley.
