  • 1 lb. whole, peeled chestnuts
  • 1 lb. thin-cut bacon
  • ¼ cup brown sugar
  • 1 tsp. smoked paprika
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the brown sugar, smoked paprika, salt, and pepper. Set it aside.
  3. Take a piece of bacon, cut it in half, and wrap each half around a chestnut securing it with a toothpick.
  4. Roll the bacon-wrapped chestnuts in the seasoned brown sugar mixture.
  5. Arrange them on a baking sheet lined with parchment paper and bake for about 25-30 minutes, or until crispy.
  6. Once out of the oven, let them rest for a few minutes and garnish with fresh rosemary before serving.
