- Preheat the oven to 375°F (190°C).
- In a mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, minced garlic, and sesame oil.
- Marinate the chicken thighs in the sauce for at least 30 minutes.
- Transfer the chicken to a greased baking dish, pour remaining marinade over, and add sliced bell pepper and pineapple chunks.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes or until chicken is cooked through.
- Garnish with sliced green onions before serving.
