  • 1 lb. boneless, skinless chicken thighs (preferred for juiciness)

  • 1 cup pineapple juice (fresh or canned)
  • ½ cup brown sugar (for sweetness)
  • ½ cup soy sauce (low-sodium recommended)
  • 2 cloves garlic, minced (for flavor)
  • 1 Tbsp. sesame oil (adds depth)

  • 1 red bell pepper, sliced (for color)
  • 1 cup pineapple chunks (fresh or canned)
  • green onions, sliced (for garnish)

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, minced garlic, and sesame oil.
  3. Marinate the chicken thighs in the sauce for at least 30 minutes.
  4. Transfer the chicken to a greased baking dish, pour remaining marinade over, and add sliced bell pepper and pineapple chunks.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes or until chicken is cooked through.
  6. Garnish with sliced green onions before serving.

Notes

Marinate chicken for better flavor and ensure it reaches an internal temperature of 165°F.
