- Season the chicken breasts with salt and pepper. Heat olive oil in a medium skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Let rest and slice.
- In a food processor, blend the basil leaves, toasted pine nuts, garlic, and a pinch of salt until finely chopped. Drizzle in the olive oil while pulsing to make a smooth pesto. Mix in Parmesan cheese.
- Slice ciabatta rolls in half and spread pesto on both sides. Layer sliced chicken, arugula, and tomatoes. Optionally sprinkle with Parmesan. Close the sandwich and serve or warm in skillet.
