Basil Pesto Chicken Sandwich for Holidays

  • 2 pieces boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 Tbsp. olive oil
  • 2 cups fresh basil leaves
  • ½ cup grated Parmesan cheese
  • ½ cup extra virgin olive oil
  • cup pine nuts (toasted for extra flavor)
  • 3 cloves garlic, peeled
  • Salt, to taste
  • 4 rolls ciabatta or your favorite crusty bread
  • 1 cup fresh arugula
  • Slices of ripe tomatoes
  • Optional: Additional Parmesan for garnish

Method
 

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a medium skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Let rest and slice.
  2. In a food processor, blend the basil leaves, toasted pine nuts, garlic, and a pinch of salt until finely chopped. Drizzle in the olive oil while pulsing to make a smooth pesto. Mix in Parmesan cheese.
  3. Slice ciabatta rolls in half and spread pesto on both sides. Layer sliced chicken, arugula, and tomatoes. Optionally sprinkle with Parmesan. Close the sandwich and serve or warm in skillet.

Notes

For the best flavor, use fresh ingredients and avoid overcooking the chicken. Feel free to customize your sandwich with additional toppings or ingredients.
