  • 4 pieces boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 Tbsp. olive oil
  • 8 oz. fresh mushrooms (cremini recommended)
  • 4 cloves garlic, minced
  • 1 tsp. dried thyme
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 Tbsp. Dijon mustard
  • Parmesan cheese, for garnish
  • Fresh parsley, chopped, for garnish

Method
 

  1. Season chicken breasts generously with salt and pepper. In a skillet, heat olive oil over medium-high heat. Sear chicken for 6-7 minutes on each side until golden-brown and cooked through (165°F).
  2. Add mushrooms to the skillet and cook until browned, about 5-6 minutes.
  3. Stir in garlic and thyme, cooking until fragrant, about 1 minute.
  4. Pour in chicken broth, simmer for 3-4 minutes. Stir in heavy cream and Dijon mustard, cooking until sauce thickens, about 2-3 minutes.
  5. Return chicken to the skillet, allowing it to simmer with the sauce for about 5 minutes. Serve garnished with Parmesan cheese and parsley.
