- Season chicken breasts generously with salt and pepper. In a skillet, heat olive oil over medium-high heat. Sear chicken for 6-7 minutes on each side until golden-brown and cooked through (165°F).
- Add mushrooms to the skillet and cook until browned, about 5-6 minutes.
- Stir in garlic and thyme, cooking until fragrant, about 1 minute.
- Pour in chicken broth, simmer for 3-4 minutes. Stir in heavy cream and Dijon mustard, cooking until sauce thickens, about 2-3 minutes.
- Return chicken to the skillet, allowing it to simmer with the sauce for about 5 minutes. Serve garnished with Parmesan cheese and parsley.
