Delicious Mini Peach Cobblers for Any Occasion

Ingredients

  • 2 cups fresh peaches, peeled and diced (or thawed frozen peaches)
  • ¼ cup granulated sugar
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1 tsp. ground cinnamon

  • 1 cup all-purpose flour
  • ¼ cup brown sugar
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • Extra granulated sugar for sprinkling

Method
 

  1. Begin by preheating your oven to 350°F (175°C). While it's warming up, peel and dice the fresh peaches into small chunks. Be sure to select ripe peaches for the best sweetness.
  2. In a medium bowl, combine the diced peaches with granulated sugar, lemon juice, vanilla extract, and cinnamon. Stir gently until well mixed, allowing the lovely aromas to fill your kitchen.
  3. In another bowl, whisk together the all-purpose flour, brown sugar, baking powder, and salt until there are no lumps. Pour in the melted butter and milk, then stir until just combined. The batter should remain thick yet pourable.
  4. Lightly grease a muffin tin with butter or cooking spray. Spoon a hefty tablespoon of the batter into each muffin cup, filling them halfway. Top with a generous spoonful of the peach mixture and then another dollop of batter. Remember to sprinkle a little extra sugar on top for a lovely crust.
  5. Place the muffin tin in the preheated oven and bake for 25-30 minutes. You’ll know they’re ready when the tops are golden brown and slightly jiggle in the center. Enjoy the delightful aroma as they bake!
