- Grease the slow cooker with butter or non-stick cooking spray.
- In a mixing bowl, whisk together the sugars, cinnamon, salt, and nutmeg. Add butter and vanilla, stirring well.
- Fold in the pecan halves, ensuring they are evenly coated.
- Transfer pecans to the slow cooker and spread evenly. Cover and cook on low for 2 hours, stirring every 30 minutes.
- After 2 hours, uncover and cook for an additional 30 minutes.
- Transfer pecans to a parchment-lined cookie sheet to cool completely.
- Serve in jars or enjoy straight from the tray.
