Delicious Slow Cooker Cinnamon Pecans

  • 1 cup pecan halves
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp. ground cinnamon
  • ¼ tsp. salt
  • ¼ tsp. nutmeg (optional)
  • 1 tsp. vanilla extract
  • 2 Tbsp. unsalted butter, melted

  • Slow cooker 3-quart recommended
  • Mixing bowl
  • Parchment paper
  • Cookie sheet

Method
 

  1. Grease the slow cooker with butter or non-stick cooking spray.
  2. In a mixing bowl, whisk together the sugars, cinnamon, salt, and nutmeg. Add butter and vanilla, stirring well.
  3. Fold in the pecan halves, ensuring they are evenly coated.
  4. Transfer pecans to the slow cooker and spread evenly. Cover and cook on low for 2 hours, stirring every 30 minutes.
  5. After 2 hours, uncover and cook for an additional 30 minutes.
  6. Transfer pecans to a parchment-lined cookie sheet to cool completely.
  7. Serve in jars or enjoy straight from the tray.

Notes

Stir every 30 minutes to ensure even cooking and prevent burning.
