Ingredients

  • 1 block cream cheese, softened
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 cup fresh blueberries (or frozen when fresh isn’t available)
Group: For the Lemon Glaze
  • 1 cup powdered sugar
  • 2-3 Tbsp. fresh lemon juice
  • Zest of 1 lemon

Method
 

  1. Begin by preheating your oven to 350°F.
  2. In a large mixing bowl, beat together the softened cream cheese and butter until light and fluffy.
  3. Gradually add the granulated sugar, then mix in the egg and vanilla extract until glossy.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the butter mixture until just combined.
  5. Gently fold in the blueberries with care.
  6. Drop heaping tablespoons of dough onto a lined baking sheet and bake for 12-15 minutes.
  7. While the cookies cool, whisk together powdered sugar, lemon juice, and zest until smooth.
  8. Once cooled, drizzle the lemon glaze over the cookies.
