- Start by trimming any excess fat from the chicken thighs.
- In a mixing bowl, whisk together the soy sauce, chicken broth, honey, rice vinegar, minced garlic, grated ginger, and sesame oil.
- Place the chicken thighs in your slow cooker and pour the marinade over the top. Cover with the lid and set to low for 6-7 hours or high for 3-4 hours.
- Optional: About 30 minutes before serving, mix cornstarch and water to create a slurry and stir into the slow cooker to thicken the sauce.
- Once done, shred the chicken directly in the slow cooker and garnish with sliced green onions and sesame seeds.
