Easy Slow Cooker Asian Chicken

  • 2 lb. boneless, skinless chicken thighs
  • 1 cup soy sauce
  • ½ cup chicken broth
  • ½ cup honey
  • ¼ cup rice vinegar
  • 4 cloves garlic, minced
  • 1 Tbsp. fresh ginger, grated
  • 1 tsp. sesame oil
  • 1 Tbsp. cornstarch (optional for thickening)
  • 1 Tbsp. water (optional for thickening)
  • sliced green onions (for garnish)
  • sesame seeds (for garnish)

Method
 

  1. Start by trimming any excess fat from the chicken thighs.
  2. In a mixing bowl, whisk together the soy sauce, chicken broth, honey, rice vinegar, minced garlic, grated ginger, and sesame oil.
  3. Place the chicken thighs in your slow cooker and pour the marinade over the top. Cover with the lid and set to low for 6-7 hours or high for 3-4 hours.
  4. Optional: About 30 minutes before serving, mix cornstarch and water to create a slurry and stir into the slow cooker to thicken the sauce.
  5. Once done, shred the chicken directly in the slow cooker and garnish with sliced green onions and sesame seeds.

Notes

Be cautious not to skip the marinade time to enhance the flavor.
