  • 2 lb. boneless, skinless chicken thighs preferably organic
  • 1 cup honey
  • ½ cup soy sauce low-sodium recommended
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 1 Tbsp. fresh ginger, grated
  • 1 Tbsp. cornstarch
  • 1 Tbsp. water
  • toasted sesame seeds for garnish
  • sliced green onions for garnish

Method
 

  1. Place the chicken thighs in the bottom of your slow cooker.
  2. In a mixing bowl, combine honey, soy sauce, rice vinegar, minced garlic, and grated ginger.
  3. Pour the teriyaki sauce over the chicken. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, whisk together cornstarch and water, stir into sauce, and cook for another 10-15 minutes until thickened.
  5. Serve the chicken topped with the sauce, garnished with sesame seeds and green onions.

Notes

This dish can be adapted for different proteins and is easy to store and reheat.
