Flavorful Slow Cooker Tex-Mex Lettuce Wraps

Ingredients

  • 2 lb. ground turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup salsa
Group: Wrapping
  • Iceberg or romaine lettuce leaves
  • Optional toppings: diced tomatoes, shredded cheese, avocado slices, and fresh cilantro

  • Large skillet
  • Cutting board

Method
 

  1. Start by finely dicing the onion and mincing the garlic.
  2. In a large skillet over medium heat, add a splash of olive oil and brown the ground turkey.
  3. Transfer the turkey to the slow cooker and add black beans, thawed corn, onion, garlic, taco seasoning, and salsa. Stir to combine.
  4. Cover and cook on low for 6 hours or on high for 3 hours.
  5. Wash the lettuce leaves and pat them dry before serving.
  6. Scoop the mixture into lettuce leaves and add your desired toppings.
