Guilt-Free Skinny Fettuccini Garlic Alfredo

A lighter take on the classic fettuccini Alfredo, this dish is perfect for indulgent yet guilt-free holiday meals.

  • 9 ounces fettuccini pasta Whole wheat is preferred for added fiber.
  • 2 Tbsp. unsalted butter
  • 2 cloves garlic, minced Fresh garlic is essential.
  • 2 Tbsp. all-purpose flour
  • 2 cups low-sodium chicken broth Homemade is best, but store-bought works.
  • 1 cup skim milk
  • 1 cup Parmesan cheese, grated Use freshly grated for best flavor.
  • Salt and pepper, to taste
  • Fresh parsley, chopped Optional garnish.

Equipment

  • Large pot For boiling pasta.
  • Large skillet For making the sauce.
  • Whisk To mix sauce ingredients.

Method
 

  1. Boil a large pot of salted water and cook the fettuccini according to package directions, until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  3. Sprinkle the flour over the garlic and stir for another minute. Gradually whisk in the chicken broth and milk, stirring until the mixture thickens.
  4. Reduce heat to low, stir in the grated Parmesan cheese until melted, then season with salt and pepper.
  5. Toss the cooked fettuccini with the sauce and a splash of reserved pasta water for a silky finish.
  6. Plate and sprinkle with chopped parsley before serving.
