Ingredients

  • 1 lb. cooked lobster meat preferably from freshly caught and steamed lobsters
  • ¼ cup mayonnaise preferably Duke's for its tangy flavor
  • 1 tsp. Dijon mustard
  • 1 Tbsp. freshly squeezed lemon juice
  • ¼ tsp. Old Bay seasoning
  • Salt to taste
  • Freshly cracked black pepper to taste
  • ½ cup finely diced celery
  • ¼ cup chopped chives

  • 4 top-split hot dog buns New England-style are the best choice
  • Unsalted butter for toasting the buns
  • Leafy romaine lettuce for garnish

Equipment

  • Large mixing bowl
  • 10-inch cast-iron skillet

Method
 

  1. Begin by carefully chopping your cooked lobster meat into bite-sized pieces. In a large mixing bowl, combine the lobster with the mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, diced celery, and chopped chives. Season with salt and freshly cracked black pepper to taste. Chill this mixture for at least 30 minutes in the refrigerator before using.
  2. While the lobster is chilling, heat a 10-inch cast-iron skillet over medium heat and add unsalted butter. Once melted, split the top-sliced hot dog buns and toast them in the skillet until golden brown and crispy on each side.
  3. Once the lobster mixture has chilled and the buns are toasted, lay romaine lettuce leaves in each bun and generously load them with the lobster mixture. Garnish with additional chives or a sprinkle of paprika, if desired.
  4. Serve your lobster rolls immediately, perhaps with a side of crispy potato chips or a light salad, and enjoy with a chilled glass of white wine.

Notes

Chill the lobster mixture for at least 30 minutes to allow flavors to meld. Serve immediately and store any leftovers separately.
