Ingredients
  

Group: Cookie Dough Layer
  • 1 cup almond butter
  • ¼ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ¼ cup maple syrup
  • 1 tsp. vanilla extract
  • 2 cups oat flour
  • 1 cup semi-sweet chocolate chips
  • ½ cup shredded sweetened coconut
  • ½ cup chopped almonds
Group: Chocolate Topping
  • 1 cup chocolate chips
  • 1 Tbsp. coconut oil

Equipment

  • Mixing bowl
  • Spatula
  • 8x8 inch baking dish Line with parchment paper for easy removal.
  • Microwave-safe bowl

Method
 

  1. In a large mixing bowl, combine the almond butter, brown sugar, granulated sugar, maple syrup, and vanilla extract. Mix together until velvety and smooth.
  2. With a spatula, gently fold in the chocolate chips, shredded coconut, and chopped almonds.
  3. Line an 8x8-inch baking dish with parchment paper and press the cookie dough mixture evenly into the bottom of the prepared dish.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring well in between, until the chocolate is silky smooth.
  5. Pour the melted chocolate over the cookie dough layer and spread it evenly.
  6. Refrigerate for at least 1-2 hours, or until the chocolate has set and the bars are firm.
  7. Once set, lift the bars from the pan using the parchment paper and slice them into squares.
