  • 4 fillets salmon, about 6 ounces each
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. black pepper, freshly cracked
  • 1 zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • fresh parsley, chopped (for garnish)

Method
 

  1. Begin by placing your salmon fillets skin-side down on a clean cutting board. Pat them dry with a paper towel.
  2. In a small bowl, combine the salt, black pepper, lemon zest, and minced garlic.
  3. In a cast-iron skillet, heat the olive oil over medium-high heat until shimmering.
  4. Gently place the salmon fillets skin-side down in the skillet and cook for about 4-5 minutes.
  5. Carefully turn each fillet over, add the lemon juice, and cook for another 3-4 minutes until done.
  6. Remove from heat, garnish with parsley, and serve immediately.

Notes

A hot skillet and proper seasoning are key for perfect searing. Enjoy your lemon pepper salmon!
