Slow Cooker Greek Chicken Gyros with Tzatziki

Tender slow-cooked chicken thighs paired with refreshing tzatziki sauce, served in warm pita for a delightful Mediterranean meal.

Ingredients
  

Group: Greek Chicken
  • 2 lbs boneless, skinless chicken thighs
  • 2 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 2 tsp. dried oregano
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 1 lemon, juiced
  • 1 cup chicken broth
Group: Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 cucumber grated and moisture squeezed out
  • 2 cloves garlic, minced
  • 1 Tbsp. fresh dill, chopped
  • 1 Tbsp. lemon juice
  • Salt, to taste

  • Pita bread
  • Fresh vegetables (lettuce, tomatoes, red onion)
  • Feta cheese, crumbled

Method
 

  1. In a mixing bowl, combine the olive oil, minced garlic, oregano, cumin, paprika, salt, pepper, and lemon juice. Rub the marinade all over the chicken thighs.
  2. Place the seasoned chicken in the slow cooker and pour in the chicken broth. Set to low for 6-7 hours.
  3. While the chicken cooks, mix the Greek yogurt, grated cucumber, garlic, dill, lemon juice, and a pinch of salt for the tzatziki sauce.
  4. Once cooked, shred the chicken directly in the slow cooker.
  5. Assemble the gyros by layering shredded chicken, tzatziki, fresh veggies, and feta on warm pita bread.

Notes

Make sure to not overload the pita for a neat meal. Fresh dill in tzatziki truly enhances the flavor!
