  • 1.5 lb. pork shoulder, trimmed
  • ¼ cup honey
  • ¼ cup soy sauce
  • 2 limes, zest and juice
  • 2 Tbsp. freshly grated ginger
  • 4 cloves garlic, minced
  • 1 Tbsp. rice vinegar
  • 1 tsp. red pepper flakes (optional) for heat
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Method
 

  1. Start by placing the trimmed pork shoulder in your slow cooker.
  2. In a medium bowl, whisk together the honey, soy sauce, lime zest, lime juice, freshly grated ginger, minced garlic, and rice vinegar.
  3. Pour this luscious marinade over the pork in the slow cooker. Massage it well to ensure the pork is coated.
  4. Cover and set your slow cooker to low for about 6-8 hours or high for 4-5 hours.
  5. Once the pork is tender, shred it using two forks and return it to the cooker, stirring to coat in the sauce.
  6. Serve the pork warm, garnished with sliced green onions and a sprinkle of sesame seeds.

Notes

Allow the pork to marinate for at least 30 minutes before cooking for maximum flavor.
