- Start by placing the trimmed pork shoulder in your slow cooker.
- In a medium bowl, whisk together the honey, soy sauce, lime zest, lime juice, freshly grated ginger, minced garlic, and rice vinegar.
- Pour this luscious marinade over the pork in the slow cooker. Massage it well to ensure the pork is coated.
- Cover and set your slow cooker to low for about 6-8 hours or high for 4-5 hours.
- Once the pork is tender, shred it using two forks and return it to the cooker, stirring to coat in the sauce.
