  • 1 cup prepared pesto
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Method
 

  1. Season the chicken breasts lightly with salt and pepper.
  2. Arrange the seasoned chicken breasts in the slow cooker and spread the pesto evenly over the chicken.
  3. Sprinkle ranch seasoning mix over the chicken and pour in the chicken broth.
  4. Cover and cook on low for 5-6 hours, until chicken is tender and easily shreds with a fork.
  5. Shred the chicken in the slow cooker and mix with the pesto and ranch sauce.
  6. Serve over rice or alongside roasted vegetables, garnished with fresh basil.
